Chateau Cadillac
On a terroir where Merlot is king, Chateau Cadillac is a reference of quality
Chateau Cadillac is a single-vineyard estate of the 13th century, located near Fronsac on the same geographical axis as Saint-Emilion. The property is made out of two types of soils: a clay/limestone plateau (20%) and « molasses du Fronsadais » on the slopes (80%).
64 hectares of red: 84% Merlot
16% Cabernet Sauvignon
11 hectares of white: 70% Sauvignon Blanc
30% Sémillon
Average age of the vines : 25 years.
The white wines are dry, aromatic and fruity thanks to a skin contact maceration in Elite vats and to an ageing process on fine lees.
The red wines can be aged in two different ways. They can either be lengthily aged in stainless tanks, or be partially or even completely aged in the 500 oak barrels (one third being new).
